Can you change the default to latest rather than catagories?

It would be nice for people that read on a frequent basis, but I may be a bit obsessive (together with several others here)

Agreed and there is a way to do this. Under preferences > Interface > Default Homepage

I will check if we can make this the default for everyone, but I am not sure yet. I definitely prefer it for myself.
